Co-owners Corey and David Menkes spend more time sourcing their chocolate than molding it, ensuring that the beans they use come from farms that practice sustainable agriculture and pay their workers fair wages. They started making chocolates in their apartment over 5 years ago. Now they craft their bean to bar chocolate. They make their bars from scratch, beginning with fermented raw cacao beans from Central and South America. Their process includes sorting, shelling, roasting, grinding and tempering. They prepare their chocolate in small batches, with no added sugar and it sits for at least one month to age. It is then melted, handset in molds and then wrapped in paper designed by David. Letterpress offers 70% and 85% bars from Venezuela, Jamaica, Belize, Costa Rica, Ecuador, Ghana, Peru and Tanzania. Letterpress also offers white chocolate from Ecuador, chocolate bar gift sets and other chocolate merchandise.
