The Chocolate Savant can personally vouch for the quality of the chocolates created by Isabella Knack at Dallmann Confections. I had the opportunity to sample Isabella’s Dark Chocolate Sea Salt Caramel at the Northwest Chocolate Festival in 2019 and it was a chocolate explosion. It was so good I wrote a separate blog about the experience. But Isabella’s creations are not limited to just caramels. She creates exquisite truffles in flavors like Cardamom and Blood Orange, Coconut Curry and Strawberry Balsamic. The PB&S truffle is also a hit. Isabella’s chocolate gift box is said to have a profound effect on the recipient’s mind, body and soul.
