Sebastian Cisneros discovered chocolate as a young boy while on a family road trip from his hometown of Quito, Ecuador to the beach. Cisneros moved to Oregon as an exchange student. He remained in Oregon producing his first chocolate under the name Cocoanu. Cloudforest was originally the name of his first bean to bar product, made from cacao beans from the Camino Verde orchard in Balao, Ecuador. This bar marked the first time that Cisneros took control of all processing steps from drying the cacao beans to producing a bar in final form. Cloudforest features a variety of bean to bar chocolates as well as some unique offerings like “Craque,” which consists of candied cacao nibs from Ecuador, organic cane sugar and sea salt harvested from the Oregon coast.
