Chuao (pronounced “chew-wow”) was established by Chef Michael Antonorsi in 2002.  It took some time for Michael to find his chocolate roots.  He pursued an undergraduate degree in bio-medical engineering and then earned an MBA and then launched a successful computer networking company.  In 1999 Michael and his family moved to Paris and enrolled in the Ecole Supérieure de Cuisine Francaise Ferrarchi and then specialized in pastry bakery and chocolate.  He moved to San Diego in 2002 and founded Chuao Chocolatier.  Chuao makes a variety of bean to bar chocolates, including salted chocolate crunch, firecracker (sea salt, a dash of chipotle and popping candy crackle in dark chocolate) and spicy maya (seductive cinnamon, pasilla chile and warming cayenne bedded in dark chocolate).  Chuao also crafts drinking chocolate and a variety of joy-filled caramels.

Tour

A sweet tour.  Chocolate lovers (ages 10 and up) can take a Willy-Wonka type tour of the Chuao Chocolatier factory in Carlsbad.  Learn how this Venezuelan chocolate factory started, try out free samples, then tour the factory floor to see how truffles and other chocolates are made.  At the end of the tour stop by the factory store and order your favorite chocolates to take home.  Cost is $15 per person.
